Dinner's in the oven :)

Well I haven't tried it yet so I can't tell you how good it is, but tonight's dinner is Cheesy Beef and Potato Bake.

Here's what you need...
1lb ground beef
2 packages (5-1/4oz each) au gratin potatoes
4 cups boiling water
1-1/3 cups water
2 teaspoons butter
1 teaspoon salt
1/2 teaspoon seasoned salt
1/2 teaspoon pepper
1 cup shredded cheddar cheese

Cook the ground beef in a medium skillet, drain then layer the bottom of a greased 13x9 pan with the ground beef.

In a separate bowl combine potatoes, seasoning mix, water, milk, butter, salt, seasoned salt and pepper. Pour over the meat. Cover and bake at 400 for 30 minutes.

Sprinkle with cheese, bake for 5 minutes uncovered or until cheese is melted. Let stand for 10 minutes before serving. Serves 8

Correction

If you plan on using the Bubble Pizza recipe instead of using 1lb of ground beef it should be at least a pound and a half, I think 2 pounds would work too. And my personal suggestion would be to use 2 cans of pizza sauce.

Dinner's Done

Tonight's Dinner....Bubble Pizza

1lb ground beef
1 15oz bottle of pizza sauce
2- 12oz tubes of buttermilk bisquits
1-1/2 Cups Mozzarella cheese
1 Cup Cheddar Cheese

Brown the ground beef, drain the fat then stir in the pizza sauce. Cut the unbaked bisquits into quarters and layer the bottom of a greased 13x9 pan with the quartered bisquits. Spread the ground beef and pizza sauce on top. Cook for 20 minutes at 400, sprinkle the cheese on top and pop back in the oven for 5 minutes.

I put mine too low in the oven so the bottom was slightly burnt, but I still got the "this is pretty good" comment. Plus it serves 6-8 so we have lunch for the rest of the week!


New Recipe

Last week I was looking for new recipies online and found one for tatertot casserole which looked pretty good and easy so I thought I would give it a try. I liked it and Luis seems to have fallen in love with it! Plus it's so easy I don't need the instructions to make it again!

Here's what you need...
1lb ground beef
1 can cream of mushroom soup
1 can of corn
Tater tots
Cheese (sliced or shredded will work)

Brown the ground beef, drain the fat then stir in the soup. Layer the bottom of a casserole dish with the meat, layer the corn on top, then the tater tots (still frozen) Put in the over for a half hour at 350. I usually move it to the top rack for the last 5 minutes so the tater tots will brown. Then add your cheese on top put back in the over for a couple minutes until it melts!

I just got 2 more casserole type recipes from a co-working, one of which I'll try tonight and let you know how it goes!

Lesson Learned

So most of you know the last couple weeks have been anything but easy for me. First I find out someone got my credit card number and racked up a number of purchases, then they opened a case at a law firm to "repair my credit" although my credit is fine, then someone stole my brand new phone. Oh and don't forget the dumb rent a cop that wrote me a parking ticket, there has been a lot of dumb little things that have happened, but I'm not going to come out of it with out learning something!


Since my credit card was stolen and it took a couple days to get a replacement it forced me to not spend money, and I'm continuing that, I made my first purchase on it last night and that was for gas, every credit card I own has a zero dollar balance. I went grocery shopping Sunday and disciplined myself to not spend a dime all week. I've never carried a balance on my credit card because I think at 21 having credit card debt when I don't have any kids or anything is horrible.


I've also always been a very open and trusting person, but again I've learned even among friends I can't leave my valuables lying around, and not everyone needs to know everything about me.


Yesterday I heared a guy friend of mine who lives in Chicago got out of his night class and was jumped by a couple guys, beat up pretty bad and had everything stolen. I'm pretty leary of walking alone at night, but this was a reminder that it can happen to anyone, just because your a guy walking alone at night doesn't mean someone isn't going to take advantage of you.


Lastly, if I can make it through all of this I can make it through anything.

Cab Ride

I arrived at the address and honked the horn. After waiting a few minutes I walked to the door and knocked. 'Just a minute', answered a frail, elderly voice. I could hear something being dragged across the floor.

After a long pause, the door opened. A small woman in her 90's stood before me. She was wearing a print dress and a pillbox hat with a veil pinned on it, like somebody out of a 1940's movie.

By her side was a small nylon suitcase. The apartment looked as if no one had lived in it for years. All the furniture was covered with sheets. There were no clocks on the walls, no knickknacks or utensils on the counters. In the corner was a cardboard box filled with photos and glassware.

'Would you carry my bag out to the car?' she said.

I took the suitcase to the cab, then returned to assist the woman. She took my arm and we walked slowly toward the curb. She kept thanking me for my kindness. 'It's nothing', I told her. 'I just try to treat my passengers the way I would want my mother treated'.

'Oh, you're such a good boy', she said. When we got in the cab, she gave me an address and then asked, 'Could you drive through downtown?'

'It's not the shortest way,' I answered quickly.

'Oh, I don't mind,' she said. 'I'm in no hurry. I'm on my way to a hospice'.

I looked in the rear-view mirror. Her eyes were glistening.

'I don't have any family left,' she continued in a soft voice. 'The doctor says I don't have very long.' I quietly reached over and shut off the meter.

'What route would you like me to take?' I asked. For the next two hours, we drove through the city. She showed me the building where she had once worked as an elevator operator. We drove through the neighborhood where she and her husband had lived when they were newlyweds. She had me pull up in front of a furniture warehouse that had once been a ballroom where she had gone dancing as a girl.

Sometimes she'd ask me to slow in front of a particular building or corner and would sit staring into the darkness, saying nothing.

As the first hint of sun was creasing the horizon, she suddenly said, 'I'm tired. Let's go now'.
We drove in silence to the address she had given me. It was a low building, like a small convalescent home, with a driveway that passed under a portico.

Two orderlies came out to the cab as soon as we pulled up. They were solicitous and intent, watching her every move. They must have been expecting her.

I opened the trunk and took the small suitcase to the door. The woman was already seated in a wheelchair.

'How much do I owe you?' she asked, reaching into her purse.

'Nothing,' I said 'You have to make a living,' she answered. 'There are other passengers,' I responded. Almost without thinking, I bent and gave her a hug. She held on to me tightly. 'You gave an old woman a little moment of joy,' she said. 'Thank you.'

I squeezed her hand, and then walked into the dim morning light. Behind me, a door shut. It was the sound of the closing of a life.

I didn't pick up any more passengers that shift. I drove aimlessly, lost in thought. For the rest of that day, I could hardly talk. What if that woman had gotten an angry driver, or one who was impatient to end his shift? What if I had refused to take the run, or had honked once, then driven away?

On a quick review, I don't think that I have done anything more important in my life. We're conditioned to think that our lives revolve around great moments. But great moments often catch us unaware --beautifully wrapped in what others may consider a small one...

PEOPLE MAY NOT REMEMBER EXACTLY WHAT YOU DID, OR WHAT YOU SAID BUT THEY WILL ALWAYS REMEMBER HOW YOU MADE THEM FEEL.

Last blow out of the summer!

I have 5 days off of work! One of them because I have strep so I'm sitting at home watching movies all day drinking orange juice and cranberry juice hoping I'm better before tomorrow. A bunch of us are heading down to Chicago to go to Howl at the Moon. We went to a piano bar with the same idea in Dells and it was a lot of fun, so this one should be too!

Then on Monday were going to Miller Park for the Cubs vs. Brewers game!! The cubs haven't been doing too good against the Brewers but hopefully they will make up for it on Monday. Were heading up early so we can tailgate all afternoon! Then of course I took Tuesday off to recover, the game doesn't start until 7 and it's 2 hours from DeKalb so we wont get home until late. Now lets just hope I get better before this weekend!!

And people say banks are bad...

Working at the bank I hear people complain all the time about every stupid fee we have....yes we have a lot, but at the same time you're making money off us. I would just like to say to all those people who think bank's nickle and dime you for everything try attending college!

First of all, to take one class it costs almost as much as 6 months of rent for me!! (My rent is pretty cheap, but still) I would love to head to the busar's office to pay my tuition, but I need a parking pass...that costs $75...oh but wait I can't get one because I live less than 5 miles from campus. So I'm going to try and pay it online...now they are going to charge me 2.8% to pay by credit card!

NIU has something called Husky bucks, you can use them like cash at different restaurants around town or the cafeteria and at copy machine's and such. So I tried to add money to it the other day, again online, I wanted to put $60 on it...they were going to charge me $1.88!!

Anytime I try and give this school money they want to charge me for it! So like I said next time you think you're getting nickled and dimed at the bank or where ever enroll yourself in a class at NIU.

Dells Fun

So I've been back for 2 weeks now, but I haven't had much time to write. Angie, Imelda, Jared and I went up to the Dells for the 4th. We had an amazing time! Friday night we met my friend Pat who took us to Monk's (a bar) for drink and to listen to "Piano Fondue." Piano Fondue is 2 guys who duel on their piano's. You can pay $5 to hear your favorite song and trust me they know your song, but then someone else can pay the other guy $7 to hear their favorite song and it goes back and forth. Then we headed back to the hotel and wanted to "sleep" we stayed up for hours talking nonsense and everyone agree's that was one of the best parts of the whole weekend.

Saturday the 4 of us went walking on the strip and went to lunch at the Riverwalk Pub, I had been there before and loved that place we ate outside next to the river it was nice. And of course we had to see some interesting people along the way...

After our walk on the strip we headed back to the hotel room, Angie and I had an urge to dance and bounce on the beds like we were 10 again! It was a learning experience, first make sure you take the sheets of the bed first, second face plants into the bed hurt, third when jumping from one bed to the other judge the distance carefully because the air conditoner hurts when you crash into it and last when plopping onto your butt the big thud is probably the bed breaking but as long as the hotel doesn't realize it during your stay it isn't your fault.

Saturday night we went to Buffalo Phil's for dinner and then watch the fireworks. We picked the best spot to watch fireworks, we were able to see 3 shows very well from our spot.
Believe it or not Jared isn't drunk...
After the fireworks we all headed to Marley's a restaurant in the day and dance club at night. We danced our butts off all night, they played the best music and the place we packed! The dance floor turrned into a pool with all the spilled drinks, which I later slipped on, but apparently it was very graceful, landed on my knees and right back up again like nothing happened lol.
Sunday the 5 of us headed to iHop for breakfast, outside again! Then headed to Mt. Olympus for a day of rollercoasters and Go karts and ended the day with Dinner at Moose Jaw where if I got their hats I think they all would have shot me so I opted against it then it was back to IL for the 4 of us....
It was an amazing weekend that none of us will forget that needs to happen again soon....Say July 25th? :)

NIU Here I come

I got accepted to NIU!! Now to figure out...

what major I want...I already graduated with my AS in Real Estate, but we all know how well the housing market is doing right now. My grandparents who said they would fund my college experience would really like to see me continue at the bank, but I don't want to limit myself to such a narrow field. So I'm leaning towards general business, but I also love photography.....

I get off at 2 today, maybe I'll go meet with someone.....

With these nice long drives I have to and from work, that will be coming to an end June 13th, I have a lot of time to think...

On my drive yesterday I started to think about how things have changed over the last year. It's the middle of the year so I suppose this post would have been better at the beginning of the year or the end, but it's here now.

I basically started over in December, First I lost my high school sweetheart of over 4 years, you know the guy who I'd talked about getting married with, having kids with and growing old together just decided it wasn't working anymore for some reason I'm still not too sure of.

Not 2 weeks after that I lost my best friend of 6 years, the girl I'd spent my high school years with, the one who was always there for me when the boyfriend was being an idiot or just whenever, whose parents had become second parents to me. We had something happen that hurt our relationship and shortly after that she sent me a text message I will never forget, and other than being polite to each other we haven't talk since.

Now on to the new year....

I don't know if it was coincidence or if he could just tell I needed a friend, but shortly after it felt like my life was falling apart a friend at work started asking me to hang out. So we started hanging out, then one day we started talking about moving. I thought to myself it was the perfect opportunity, I was still trying to get used to the idea of not being with the boy, and loosing the best friend. So moving to another town with a whole new group of people was probably one of the best things I could do....

The idea of moving out with two guys I didn't know real well was slightly nerve racking, but none the less I decided to do it. The idea of telling my parents I was moving out with two guys I didn't know real well was even more nerve racking, but they took it amazingly well, and I'm still surprised today.

So it's the first time I've been on my own and while it's only been 2 weeks it's going well, we've had our growing pains together, but I expected that. It's the first time I've been single for more than a couple weeks and not only am I fine with it, I'm actually enjoying it. It's the first time where if you asked me what I was going to be doing in a year or 5 years I would tell you I have no idea and I kinda like that too.

On June 15th I start a new job, well not really a new job, the same job I've been doing for the last 3 and half years, just a new location with all new people. I've been talking to 2 of the girls down there so they wont all be new faces, and I'm super excited.

Sorry for the long post. It makes up for my lack of posts lately. :)

We got it!!

We got the apartment and we move Saturday May 16th!! Our security deposit is only $400, and our rent will be $600/month with the first month free! They uped it $10 because we got ceiling fans in the apartment...sounds pretty good to me!

Let me just give you an overview of my week.....
Monday-work 8-6
Tuesday-work 8-5, my 21st birthday, party at Stingers from 6-????
Wednesday- Recover, visit our actual apartment at 3
Thursday- work 8-5
Friday- work 8-4, Keith Urban concert at 7-????
Saturday- work 9-12, sign our lease in Dekalb at 1, move all day, party all night
Sunday- keep moving/Recovering
Monday- work 9-6
Tuesday- work 8-5
Wednesday- Sox Game!!!
Thursday- work 8-5, blood drive (hopefully my blood wont be too thin)
Friday-work 8-6
Saturday- work 8-12

It's going to be a long couple weeks...with any luck I'll make it through! Wish me luck!

Don't know what to do

I don't even know where to start with this one..... My grandpa calls my dad and says that my grandma would like to talk to me. Sounds weird so far? (It gets better) So I'm thinking that my grandma wants to go to lunch, so I stall for a day and call her back. My grandpa answers (and can actually hear me! He's 93) Anyway, he tells me that grandma and him wanted to talk to me....so now I'm a little nervous, I don't talk to my grandparents much, we talk at the holiday's and occasional visits throughout the year, but we don't get real personal.
And now my grandma is on the phone too, so she asks me "Abi, do you still want to go to NIU." Now I'm beyond confused....She goes on to explain that my grandma and grandpa have been online doing some research and want to pay for me to go to NIU!
I'm not sure why, but I get the impression my grandma doesn't like that I went to MCC, she's always asking why I didn't go to a four year school. Basically it all comes down to I didn't want to start my life with all that debt. You graduate from college with $50,000+ in student loans then have to get yourself a car and a place to live and I just don't want to start life like that. And when I graduated high school there was this cute guy I couldn't imagine being away from for more than a couple days at at time.
So now the question is what do I do. On the one hand it's great timing, because I'm at this stupid stage where I'm losing the friends I had in high school and need to make new ones...including the before mentioned cute guy. But on the other hand I love where I'm at at work. I just went through personal banker training and I know if I leave they wont hold my job for me. And when I decided I was attending MCC I took classes to get a degree from them, I didn't take classes that would transfer or possibly even apply to a degree that NIU would offer me. Needless to say I don't think I'll be sleeping for a while trying to figre out what to do.

Cookies...

Can you return opened Christmas present? I asked for a cookie press for Christmas....stupidest thing I've ever done. It literally took me hours to make these cookies and I might have gotten 2 dozen when I should of had 3 dozen. I can't get the stupid cookies off the press, they just don't stick to the cookies sheet I don't know what I'm doing wrong the cookie dough was room temperature I let it sit on the corner for probably an hour, I tried pulling them off fast I tried pulling them off slow. So I did what anyone would do..I blamed the cookie sheet! ;)

Note to self STOP volunteering for stuff!

I have a coffee mug that says this that I used to keep on my desk....I think I need to get it back out. I'm sure everyone has heard of March of Dimes or WalkAmerica, they raise money to help prevent premature pregnancy. Well our team captain for the last couple years doesn't work at the bank so we need a new one.....I kinda feel like Mikey, you know the old saying "give it to Mikey" I think I'm Mikey, don't want to do something give it to Abi she'll do it.
Although, March of Dimes really is a great cause. So here is the part where I ask you for money, another specialty of mine. You can help the cause by visiting my page and help me out!
